Peashoots and Grits

For some reason, whenever I see the word “grits” my brain automatically says “Grits, dummy.” Who amoungst you remembers that reference? Grits are great and incredibly versatile. Pickled Peppers

Sometimes a sub-sandwich or wrap-sandwich just needs a little pizzaz. 3-4 slices of pickled peppers is just the key. And being a capsaicin (i.e. (E)-N-(4-Hydroxy-3-methoxybenzyl) -8-methylnon-6-enamide, trans-8-Methyl-N-vanillylnon -6-enamide) wimp, I need the sweet ones to start with. So, I sneak only a little bit of fire in these beauties!

Pumpkin Spice Hot Chocolate

You can easily take this from a beverage to a dessert by making it into pudding. Add 2 1/2 tablespoons of cornstarch to the mixture in the blender and blend well. Heat on the stove or in the microwave, stirring constantly (or once every minute in the microwave), until it boils and thickens. Pour into 4 dessert bowls and refrigerate until set.

Sauteed Pea Shoots

Pea shoots come but once a year. The Tea House in St. Paul (great restaurant, by the way) has them seasonally. They are simply done. And the taste— well it’s first the texture of greens and then pea-flavor comes thru. Very odd. Very delicious.

Sichuan Dry-Fried Veggies and Tofu

Sichuan preserved vegetable, a pickled and canned mustard tuber, is available at most Asian supermarkets. You can buy the chunk style and chop it yourself; if you buy it pre-shredded, you may want to rinse off some of the salt.

The recipe calls for green beans; we used the stirfry veggies we had on hand – bok choy, brussels sprouts, broccoli etc. Delicious!!

Spicy Ginger Tofu-Noodle Salad

Napa cabbage works wonderfully with hot-cold salads of the Asian variety. With a nice marinated protein atop, this flavor-filled salad makes a full meal fairly quickly. If you are not familiar with ginger root, buy a small knuckle in the produce section of the grocery and store it in a sealed plastic bag in the freezer. I use a Microplane zester to quickly prep the root for use in all Asian dishes, straight from the freezer, no need to peel. Adds a sweet, tangy flavor to salads, stirfry, hot/iced tea, lemonade among other things.
