Sprouted Lentil Salad

Fresh, crunchy, “raw” salad that makes the most of the nutrition found in fresh vegetables and newly sprouted seeds.
**Check out Sproutpeople.com for the best and widest selection of sprouting seeds I have found. I live there in the winter months!

Serves: 4-5 side salads
Vegan!

Ingredients
4 cup sprouted lentils
2 carrots, grated      View Available Products
1/4 cup sweet onion, diced      View Available Products
1/4 cup parsley, chopped      View Available Products
2 Tbsp olive oil
1/4 cup fresh lemon juice or white balsamic vinegar
3 dates, soaked in 1/4c water to soften
sea salt to taste
3 Tbsp nutritional yeast

Step by Step Instructions
  1. Combine lentils, carrots, onion, parsley in a bowl.
  2. In a blender, whiz up remaining ingredients, including date soaking water.
  3. Pour over vegetables, toss and chill before serving
