While trying to eat gluten-free for a while, I discovered Brown Rice Tortillas (Food for Life, at the co-op type stores) and have been playing with them a bit. I have come to learn that I like them MORE than flour tortillas for wraps. And now that it is mesclun season (that’s “salad mix” to you and me), I have partaken in the following recipe for lunch just about every day I am home.

I had an inspiration the other day with left over rice. My mind when to “fried rice” but my stomach said no to the Asian variety. So I reverted to our stores of canned, frozen, root-cellared produce from last year and concocted a south-of-the-border variety. The “day-old” route allowed it to remain non-sticky!

I was introduced to fry bread at a Pow Wow in CA while dating a native American young man in college; Pow Wows were wonderful community experiences. And the food was great! This bread (tho not that healthy!) can be served simply with honey atop, or serves as a great receptacle to create Navajo tacos. (Make ’em big enough to accept your fillings! I can’t pronounce this recipe, but it is hearty, nutritious and full of flavor variety. If you are garlic nut (like me), ramp up your garlic addition to suit your palate. And if you are going thru the trouble of making your beans “from scratch”, consider increasing the volume a titch so you have some leftover for a burrito meal or two the next day!
Great lunch left-over too!
