Creamed Celery Soup

Serves: 4
Ingredients
1 Tbsp
olive oil
1
onion, rough chop
2 cloves
garlic, minced
1/2 tsp
thyme
1 head
celery, rough chopped
1
white potato or 1 cup cauliflower, chopped
1 quart
vegetable stock/broth
Salt and pepper, to taste
Step by Step Instructions
- Heat the oil in a non stick pot and add the onion. Cook until softened, then add garlic for a brief 10-20 seconds.
- Add the remaining ingredients and simmer for 20 minutes.
- Puree the soup using a blender or hand-held stick blender.
- Return to the pan, check seasoning and serve. Or put in 1-2 cup, recipe-sized portions, freezer bag/jar/container. Cool and freeze.
