Tofu Cilantro and Lime

Serves: 4
Ingredients
3 Tbsp
old bay seasoning (store bought or homemade
3-4
bay leaves
10-15
black peppercorns
1 tsp
sea salt
2 lbs
extra firm tofu (Wildwood brand is ideal)
1/4 cup
lime juice
1/4 tsp
sea salt, to taste
2 dashes
hot sauce
2 Tbsp
olive oil
2/3 cup
cilantro, chopped (more for garnish)
freshly ground pepper, to taste
Step by Step Instructions
- Cut tofu into bite-sized cubes or rectangles (1-1.5cm x 2-2.5cm).
- In a large pot, add seasoning and tofu and cover with water. Simmer for 15min. Remove from heat and allow to sit covered until ready for use, then drain.
- In a medium bowl, toss together the onion, bell pepper, garlic, lime juice, salt and hot sauce and let marinate for 15 minutes.
- In a large sauté pan over medium-high heat, heat the olive oil. Add the onion and bell pepper mixture, the seasoned tofu, and 2/3 cup cilantro. Sauté until the tofu is just cooked through, about 5 to 7 minutes. Season to taste with salt and freshly ground pepper.
