Crockpot Lentil Stew

A colorful soup, easy to make, and full of nutritious vitamins!

Serves: 4-6


Ingredients
2 1/2 cups brown/green lentils
6 cups water
3 cubes vegetable bouillon
3 carrots, diced
3 stalks celery, diced
4 small onion, diced
2 summer squash, diced
2 large tomatoes, diced
1 chili pepper, minced
1 Italian red pepper, diced
1 tsp oregano, dried or fresh
6 leaves basil, fresh, minced
1 tsp thyme, dried or fresh
1/4 cup dry sherry (optional)
2 cups kale, chopped

Step by Step Instructions
  1. Put it in the crockpot and turn on high. Let it cook! When lentils are soft (2hrs), serve it up with a dollop of Sour Supreme (Tofutti brand). Or turn down to warm and let it ride until the picnic time. Saves well for the party tomorrow too.
