Napa cabbage salad

Can you possibly pair fresh produce with the old college standby, ramen? Gasp! Try it on for size, but don’t look for it to be super healthy.

Serves: 4-5


Ingredients
2 Tbsp olive oil
2 pkg oriental-flavor ramen noodles
3 oz unsalted sunflower seeds
4 oz sliced or slivered almonds
1 sweet onion, fine chop (alt. 6-8 green onions)
1 napa cabbage, shredded
1/2 cup red or white wine vinegar
1/2 cup olive oil
1 cup sugar
2 Tbsp soy sauce
2 tsp dry mustard
2 pkgs oriental-flavor ramen seasoning

Step by Step Instructions
  1. Brown in 2 T. olive oil: 2 pkgs oriental ramen noodles (broken into bite-sized pieces), 3 oz unsalted sunflower seeds, 4 oz sliced or slivered almonds.
  2. Fine chop 1 sweet onion or 6-8 green onions and shred 1 large Napa cabbage.
  3. DRESSING (whirl in blender): 1/2 c. red or white wine vinegar 1/2 c. olive oil 1 c. sugar 2 Tbsp soy sauce 2 tsp dry mustard 2 pkgs ramen seasoning
  4. Allow noodles and nuts to cool. Toss all ingredients together; serve immediately.
