Leeks and Carrots

Quick little diddy for some color and great taste variety on the side.

Serves: 2-4


Ingredients
2 leeks, finely chopped whites and 1/2 greens
4 carrots, diced
1/3 cup vegetable broth
2 Tbsp margarine
1 Tbsp maple syrup or sugar
1/2 tsp thyme
1/2 tsp sea salt
1/8 tsp ground black pepper

Step by Step Instructions
  1. Add all ingredients to large skillet; bring to boil. Reduce to simmer and cook until liquid evaporated. Sauté 1-2 additional minutes while stirring until veggies lightly browned.
