Veggie salad sandwich

I just made this up when I had a craving and a well stocked fridge!

Serves: 4-6


Ingredients
1 lb extra-firm tofu (Wildwood is best)
1-2 cucumbers, seeded and diced fine
1-2 sweet peppers, seeded and diced fine
2 ribs celery, diced fine
1-3 onions, sweet or green
10 green olives, diced fine
1/2 tsp sea salt
1/8 tsp ground black pepper
1 cup Veganaise or Nayonaise
1/3 cup prepared yellow mustard
1/2 tsp garlic powder
1/2 cup chopped fresh cilantro

Step by Step Instructions
  1. Mix all ingredients. Let sit in fridge 2-3hours before serving.
  2. Load on fresh bread or rolls.
