Parsley Sauce with Breadcrumbs

Parsley gives it the “green” and the “fresh” and the olives and garlic give it the punch.

Use as a pate-like recipe to top fresh veggie finger-food, or as a bright flavoring for a simply prepared protein.

Serves: 2 cups


Ingredients
1/3 cup fresh bread crumbs
2 Tbsp red wine vinegar or balsamic
1 cup fresh parsley, chopped
1/2 cup olive oil
1 Tbsp capers
1 Tbsp pine nuts or walnuts
10 pitted green or Calamata olives
2 cloves garlic, crushed/minced
sea salt and pepper to taste

Step by Step Instructions
  1. Stir together bread crumbs and vinegar in a bowl; set aside. Pulse parsley, oil, capers, nuts, olives, and garlic in a food processor until smooth; stir into bread crumb mixture and season with salt and pepper.
