Boc Choi Slaw

Wonderful, crunch, flavorful slaw.

Serves: 2-4
Vegan!

Ingredients
1/4 cup seasoned rice vinegar
1 Tbsp toasted sesame oil
2 tsp sugar
2 tsp Dijon mustard
1/4 tsp salt
1 Tbsp white or black sesame seeds
6 cup very thinly sliced bok choi (about a 1-pound head, trimmed)
2 carrots, shredded
2 scallions, thinly sliced

Step by Step Instructions
  1. Whisk first 6 ingredients together.
  2. Pour over vegetables and toss. Let sit in refrigerator 2-3hrs prior to serving.
