Creamed Celery Soup

Now, this is a “must” for winter hot-dishes! Make your own now and, wow, isn’t it so much easier to put together a nice 1-pan meal when it is dark and cold out._

Serves: 4


Ingredients
1 Tbsp olive oil
1 onion, rough chop
2 cloves garlic, minced
1/2 tsp thyme
1 head celery, rough chopped
1 white potato or 1 cup cauliflower, chopped
1 quart vegetable stock/broth
Salt and pepper, to taste

Step by Step Instructions
  1. Heat the oil in a non stick pot and add the onion. Cook until softened, then add garlic for a brief 10-20 seconds.
  2. Add the remaining ingredients and simmer for 20 minutes.
  3. Puree the soup using a blender or hand-held stick blender.
  4. Return to the pan, check seasoning and serve. Or put in 1-2 cup, recipe-sized portions, freezer bag/jar/container. Cool and freeze.
